It\u2019s comforting, hearty, and perfect for a cozy family meal.<\/p>\n<h2>Ingredients<\/h2>\n<h3>For the Turkey<\/h3>\n<ul>\n<li>1 whole turkey, about 10\u201312 lbs<\/li>\n<li>4 Tbsp unsalted butter, softened<\/li>\n<li>2 Tbsp olive oil<\/li>\n<li>2 tsp salt<\/li>\n<li>1 tsp black pepper<\/li>\n<li>1 tsp garlic powder<\/li>\n<li>1 tsp dried thyme<\/li>\n<li>1 tsp dried rosemary<\/li>\n<li>1 tsp dried sage<\/li>\n<li>1 onion, quartered<\/li>\n<li>2 celery stalks, chopped<\/li>\n<li>2 carrots, chopped<\/li>\n<li>2 cups chicken or turkey broth<\/li>\n<\/ul>\n<h3>For the Mashed Potatoes<\/h3>\n<ul>\n<li>3 lbs Yukon Gold or Russet potatoes, peeled and cubed<\/li>\n<li>4 Tbsp butter<\/li>\n<li>\u00bd cup warm milk or heavy cream<\/li>\n<li>Salt and pepper, to taste<\/li>\n<\/ul>\n<h3>For the Gravy<\/h3>\n<ul>\n<li>4 Tbsp turkey drippings or butter<\/li>\n<li>4 Tbsp all-purpose flour<\/li>\n<li>2\u20133 cups turkey or chicken broth<\/li>\n<li>Salt and black pepper, to taste<\/li>\n<\/ul>\n<h2>Instructions<\/h2>\n<h3>1. Prepare the Turkey<\/h3>\n<p>Preheat the oven to 350\u00b0F (175\u00b0C).<\/p>\n<p>Pat the turkey dry with paper towels. Rub the softened butter and olive oil all over the turkey, including under the skin where possible.<\/p>\n<p>Season generously with salt, pepper, garlic powder, thyme, rosemary, and sage.<\/p>\n<p>Place the onion, celery, and carrots in the bottom of a roasting pan.
