{"id":7119,"date":"2026-08-12T16:52:41","date_gmt":"2026-08-12T16:52:41","guid":{"rendered":"https:\/\/recipes.ukbiddingdirectory.com\/?p=7119"},"modified":"2026-08-12T16:52:41","modified_gmt":"2026-08-12T16:52:41","slug":"classic-pot-roast-with-mashed-potatoes","status":"publish","type":"post","link":"https:\/\/recipes.ukbiddingdirectory.com\/index.php\/2026\/08\/12\/classic-pot-roast-with-mashed-potatoes\/","title":{"rendered":"Classic Pot Roast with Mashed Potatoes"},"content":{"rendered":"<h3>Classic Pot Roast with Mashed Potatoes<\/h3>\n<p><strong>Servings:<\/strong> 6\u20138<br \/>\n<strong>Prep Time:<\/strong> 20 minutes<br \/>\n<strong>Cook Time:<\/strong> 3\u20133\u00bd hours<\/p>\n<h4>Ingredients<\/h4>\n<p><strong>For the Pot Roast:<\/strong><\/p>\n<ul>\n<li>3\u20134 lb (1.4\u20131.8 kg) beef chuck roast<\/li>\n<li>2 tbsp olive oil<\/li>\n<li>1 large onion, chopped<\/li>\n<li>4 cloves garlic, minced<\/li>\n<li>4 carrots, cut into large pieces<\/li>\n<li>3\u20134 celery stalks, cut into pieces<\/li>\n<li>2 cups beef broth<\/li>\n<li>1 cup red wine or additional beef broth<\/li>\n<li>2 tbsp tomato paste<\/li>\n<li>1 tsp dried thyme<\/li>\n<li>1 tsp dried rosemary<\/li>\n<li>2 bay leaves<\/li>\n<li>1 tsp salt<\/li>\n<li>\u00bd tsp black pepper<\/li>\n<\/ul>\n<p><strong>For the Mashed Potatoes:<\/strong><\/p>\n<ul>\n<li>2\u00bd lb (1.1 kg) potatoes, peeled and cubed<\/li>\n<li>4 tbsp butter<\/li>\n<li>\u00bd\u2013\u00be cup warm milk<\/li>\n<li>Salt and black pepper to taste<\/li>\n<\/ul>\n<h4>Instructions<\/h4>\n<ol>\n<li><strong>Season the beef:<\/strong> Pat the roast dry and season generously with salt and pepper.<\/li>\n<li><strong>Sear:<\/strong> Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast for about <strong>3\u20134 minutes per side<\/strong>, until nicely browned. Remove and set aside.<\/li>\n<li><strong>Cook the vegetables:<\/strong> Add onion, carrots, and celery. Cook for 4\u20135 minutes. Add garlic and tomato paste and cook for another minute.<\/li>\n<li><strong>Add the liquid:<\/strong> Pour in the beef broth and red wine (or extra broth), scraping the browned bits from the bottom.<\/li>\n<li><strong>Slow cook:<\/strong> Return the roast to the pot. Add thyme, rosemary, and bay leaves. Cover and cook at <strong>325\u00b0F (165\u00b0C) for about 3\u20133\u00bd hours<\/strong>, until the beef is very tender and easily pulls apart with a fork.<\/li>\n<li><strong>Make the mashed potatoes:<\/strong> Boil potatoes in salted water for about <strong>15\u201320 minutes<\/strong>, until fork-tender. Drain well. Mash with butter and warm milk. Season with salt and pepper.<\/li>\n<li><strong>Make the gravy:<\/strong> Remove the roast and vegetables. You can simmer the cooking liquid for a few minutes to reduce it, or thicken it with a little cornstarch mixed with cold water.<\/li>\n<li><strong>Serve:<\/strong> Slice or shred the pot roast and serve over creamy mashed potatoes.
