The best part? It’s simple to prepare and perfect for enjoying with your morning coffee or afternoon tea.

Ingredients

200g (7 oz) cream cheese, softened

50g (3 tbsp) unsalted butter, softened

100ml (7 tbsp) milk

4 large eggs, separated

70g (⅓ cup) granulated sugar

40g (⅓ cup) cake flour

10g (1 tbsp) cornstarch

1 tsp vanilla extract

Instructions

Preheat your oven to 320°F (160°C). Line the bottom of a round cake pan with parchment paper.

Place the softened cream cheese, butter, and milk in a heatproof bowl. Gently warm the mixture over a double boiler, stirring until everything is completely smooth and well combined. Remove from the heat and let it cool slightly.

Add the egg yolks and vanilla extract to the cream cheese mixture. Whisk until smooth.

Sift in the cake flour and cornstarch. Mix gently until you have a smooth, lump-free batter.

In a separate clean bowl, beat the egg whites until foamy. Gradually add the sugar and continue beating until you get soft, glossy peaks. Do not overbeat.

Gently fold the whipped egg whites into the cream cheese batter in three additions. Use a spatula and fold slowly to keep as much air in the mixture as possible. This will give your cake its beautiful cloud-like texture.

Pour the batter into the prepared cake pan and gently tap the pan once or twice on the counter to remove large air bubbles.

Place the cake pan in a larger baking tray and pour in some hot water to create a water bath. This helps the cake bake gently and prevents it from cracking.

Bake for approximately 50–60 minutes, or until the cake is lightly golden on top and feels set but still soft and delicate.

Turn off the oven and leave the cake inside with the oven door slightly open for about 10–15 minutes. This helps prevent the cake from shrinking too quickly.

Remove the cake from the oven and let it cool completely before carefully removing it from the pan.

Dust with powdered sugar before serving, if desired.

Serving Suggestion

Serve this beautiful Cloud Cake plain or with fresh berries, whipped cream, or a light dusting of powdered sugar.
