A comforting family dinner perfect with potatoes, rice, or rustic bread.<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>1 bone-in pork rouelle (about 1.2 to 1.5 kg), trimmed but left whole<\/li>\n<li>3 large yellow onions, finely sliced<\/li>\n<li>4 whole garlic cloves, unpeeled<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>2 tablespoons butter<\/li>\n<li>1 cup chicken or beef broth<\/li>\n<li>1\/2 cup dry white wine (optional)<\/li>\n<li>1 tablespoon Dijon mustard<\/li>\n<li>1 teaspoon dried thyme<\/li>\n<li>2 bay leaves<\/li>\n<li>Salt and black pepper to taste<\/li>\n<li>Fresh parsley for garnish<\/li>\n<\/ul>\n<h2>Instructions<\/h2>\n<h3>1. Prepare the Pork<\/h3>\n<p>Pat the pork rouelle dry with paper towels. Season generously with salt and black pepper on both sides.<\/p>\n<h3>2. Brown the Meat<\/h3>\n<p>Heat the olive oil and butter in a large Dutch oven or deep skillet over medium-high heat. Sear the pork for 4\u20135 minutes per side until deeply golden brown. Remove and set aside.<\/p>\n<h3>3. Cook the Onions<\/h3>\n<p>In the same pan, add the sliced onions and cook slowly for 10\u201315 minutes until soft and caramelized. Add the whole garlic cloves and stir for another 2 minutes.<\/p>\n<h3>4. Build the Sauce<\/h3>\n<p>Pour in the white wine and let it simmer for 2 minutes to reduce slightly.
