Perfect with rice, mashed potatoes, or fresh bread.<\/p>\n<h3>\u00a0Ingredients<\/h3>\n<ul>\n<li>2 tbsp vegetable oil<\/li>\n<li>1 large onion, chopped<\/li>\n<li>3 cloves garlic, minced<\/li>\n<li>1 tbsp fresh ginger, chopped<\/li>\n<li>1.2\u20131.5 kg oxtail pieces<\/li>\n<li>Salt and black pepper, to taste<\/li>\n<li>2 tbsp tomato paste<\/li>\n<li>1 cup crushed tomatoes (or 2 fresh tomatoes, grated)<\/li>\n<li>2 carrots, sliced<\/li>\n<li>2 potatoes, cubed (optional)<\/li>\n<li>1 tsp paprika<\/li>\n<li>1 tsp thyme (dry)<\/li>\n<li>2 bay leaves<\/li>\n<li>1 tsp allspice (optional)<\/li>\n<li>1 Scotch bonnet pepper (optional, for heat)<\/li>\n<li>3 cups beef broth (or water + beef cube)<\/li>\n<li>1 tbsp soy sauce<\/li>\n<li>1 tsp brown sugar (optional)<\/li>\n<li>Fresh parsley for garnish<\/li>\n<\/ul>\n<h3>\u00a0Instructions<\/h3>\n<ol>\n<li><strong>Season &amp; sear:<\/strong><br \/>\nPat oxtail dry. Season well with salt and pepper. Heat oil in a heavy pot and brown the oxtail on all sides. Remove and set aside.<\/li>\n<li><strong>Build the base:<\/strong><br \/>\nIn the same pot, add onion and saut\u00e9 3\u20134 minutes. Add garlic and ginger; cook 30 seconds. Stir in tomato paste and cook until slightly darkened.<\/li>\n<li><strong>Add vegetables &amp; spices:<\/strong><br \/>\nAdd carrots, potatoes (if using), paprika, thyme, bay leaves, and allspice.<\/li>\n<li><strong>Braise:<\/strong><br \/>\nReturn oxtail to the pot. Add crushed tomatoes, soy sauce, brown sugar, Scotch bonnet, and beef broth. Liquid should mostly cover the meat.<\/li>\n<li><strong>Slow cook:<\/strong><br \/>\nCover and simmer on very low heat for <strong>2.5\u20133 hours<\/strong>, stirring occasionally, until the meat is very tender and the sauce thickens.<br \/>\n(Pressure cooker: ~45 minutes. Slow cooker: 7\u20138 hours on low.)<\/li>\n<li><strong>Finish:<\/strong><br \/>\nTaste and adjust salt\/pepper. Remove bay leaves and pepper.
