Boil them in salted water for about 15\u201320 minutes, until tender. Drain well.<\/li>\n<li><strong>Prepare the cheese sauce<\/strong><br \/>\nIn a saucepan over low heat, melt the butter. Add the milk and crumbled Roquefort cheese. Stir gently until the cheese melts and the sauce becomes smooth and creamy.<\/li>\n<li><strong>Combine<\/strong><br \/>\nAdd the cooked potatoes to the sauce. Gently mix until all the potatoes are coated.<\/li>\n<li><strong>Season<\/strong><br \/>\nAdd salt (careful\u2014Roquefort is already salty) and black pepper to taste.<\/li>\n<li><strong>Serve<\/strong><br \/>\nTransfer to a serving dish and sprinkle with fresh parsley if desired.
