Prepare the eggplant<\/h3>\n<ul>\n<li>Wash and cut eggplants into long strips or bite-sized chunks.<\/li>\n<li>Soak in salted water for 10 minutes (helps reduce oil absorption).<\/li>\n<li>Drain and pat dry.<\/li>\n<\/ul>\n<h3>2. Cook the eggplant<\/h3>\n<ul>\n<li>Heat a pan or wok with a little oil.<\/li>\n<li>Fry eggplant until soft and slightly golden.<\/li>\n<li>Remove and set aside.<\/li>\n<\/ul>\n<h3>3. Combine<\/h3>\n<ul>\n<li>Add cooked eggplant back into the pan.<\/li>\n<li>Toss everything together until well coated.<\/li>\n<\/ul>\n<h3>7.
