Mediterranean Chicken Zucchini Bake<\/strong><\/h2>\n

A hearty and flavorful one-pan Mediterranean dish packed with juicy chicken, tender vegetables, and creamy feta cheese.<\/p>\n

  • 3 boneless, skinless chicken breasts, cut into bite-sized pieces<\/li>\n
  • 2 medium zucchinis, sliced into rounds<\/li>\n
  • 1 pint cherry tomatoes, halved<\/li>\n
  • 1 red bell pepper, diced<\/li>\n
  • 1\/2 red onion, thinly sliced<\/li>\n
  • 3 garlic cloves, minced<\/li>\n
  • 1\/4 cup olive oil<\/li>\n
  • 1 teaspoon dried oregano<\/li>\n
  • 1 teaspoon dried basil<\/li>\n
  • 1\/2 teaspoon dried thyme<\/li>\n
  • Salt and pepper to taste<\/li>\n
  • 1\/2 cup crumbled feta cheese<\/li>\n
  • Fresh parsley, chopped (optional)<\/li>\n<\/ul>\n

    Instructions:<\/strong><\/h3>\n

    1. Preheat oven<\/strong> to 400\u00b0F (200\u00b0C).<\/li>\n
    2. In a large bowl, combine the chicken pieces, zucchini, cherry tomatoes, bell pepper, red onion, and garlic.<\/li>\n
    3. Drizzle with olive oil and sprinkle oregano, basil, thyme, salt, and pepper. Toss everything well to coat evenly.<\/li>\n
    4. Transfer the mixture to a large baking dish and spread it out in a single layer.<\/li>\n
    5. Bake for 25\u201330 minutes, or until the chicken is fully cooked and the vegetables are tender.<\/li>\n
    6. Remove from the oven and sprinkle crumbled feta cheese on top.<\/li>\n
