Pickled Cucumbers, Onions & Bell Pepper Salad<\/strong><\/h2>\n

A fresh, crunchy, tangy salad that\u2019s perfect as a side dish or sandwich topping!<\/p>\n

\u00a0Ingredients:<\/h3>\n
    \n
  • 4\u20135 medium cucumbers, thinly sliced<\/li>\n
  • 1 medium red onion, thinly sliced<\/li>\n
  • 1 red bell pepper, sliced<\/li>\n
  • 1 yellow bell pepper, sliced<\/li>\n
  • 2\u20133 cloves garlic, sliced (optional)<\/li>\n
  • 1 tablespoon fresh parsley or dill, chopped<\/li>\n
  • 1 teaspoon red pepper flakes (optional, for heat)<\/li>\n
  • 1 teaspoon whole black peppercorns<\/li>\n
  • 1 teaspoon mustard seeds (optional)<\/li>\n<\/ul>\n

    For the Pickling Brine:<\/h3>\n
      \n
    • 1 cup white vinegar<\/li>\n
    • 1 cup water<\/li>\n
    • 2 tablespoons sugar<\/li>\n
    • 1 tablespoon salt<\/li>\n<\/ul>\n

      \u00a0Instructions:<\/h3>\n

      1. Prepare the vegetables:<\/strong>
        \nWash and thinly slice the cucumbers, onion, and bell peppers.<\/li>\n
      2. Pack the jar:<\/strong>
        \nIn a large clean glass jar, layer the cucumbers, onions, bell peppers, garlic, herbs, and spices.<\/li>\n
      3. Make the brine:<\/strong>
        \nIn a small saucepan, combine vinegar, water, sugar, and salt.
        \nHeat over medium heat, stirring until sugar and salt dissolve. Do not boil.<\/li>\n
      4. Pour & seal:<\/strong>
        \nCarefully pour the warm brine over the vegetables until fully covered.<\/li>\n
      5. Cool & refrigerate:<\/strong>
        \nLet it cool to room temperature, then seal with a lid and refrigerate for at least 2 hours (overnight is best).<\/li>\n<\/ol>\n
