 Pineapple Cake Bars

Ingredients

Crust & Topping:

  • 1½ cups all-purpose flour
  • ¾ cup cold butter, cut into cubes
  • ½ cup sugar
  • Pinch of salt

Filling:

  • 2 large eggs
  • ½ cup all-purpose flour
  • 1 cup sugar
  • 1 can (about 15 oz / 425 g) crushed pineapple, drained
  • ½ cup sour cream
  • Pinch of salt

Optional Glaze:

  • 1 cup powdered sugar
  • 1 tsp vanilla extract (or coconut extract)
  • 2 tbsp milk or half-and-half

Instructions

  1. Preheat oven to 350°F (180°C). Grease a 9×13 inch baking pan.
  2. In a bowl, combine flour, sugar, salt, and cold butter. Use your fingers or a pastry cutter to make a crumbly mixture. Reserve about 1 cup of the crumbs for topping. Press the remaining crumbs into the bottom of the prepared pan to form the crust. Bake for 15 minutes until lightly golden.
  3. In another bowl, whisk together eggs, sugar, flour, salt, drained pineapple, and sour cream until well combined. Pour this mixture over the pre-baked crust.
  4. Sprinkle the reserved crumb mixture evenly on top.
  5. Bake for about 1 hour, or until the top is golden and the bars are set.
  6. If desired, prepare a glaze by mixing powdered sugar, vanilla, and milk. Drizzle over the warm bars.
  7. Allow to cool, then cut into squares and serve.

Tips

  • Add shredded coconut or chopped nuts on top for extra texture.
  • Serve with vanilla ice cream for a delicious dessert.
