 LOW-CALORIE GREEK YOGURT CAKE

INGREDIENTS

  • 1 cup plain Greek yogurt (low-fat or non-fat)
  • 2 large eggs
  • 1/3 cup honey or maple syrup (or low-calorie sweetener)
  • 1/4 cup vegetable oil (or unsweetened applesauce)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (or oat flour)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • Zest of 1 lemon (optional)

INSTRUCTIONS

  1. Preheat oven to 180°C (350°F). Grease or line a baking pan.
  2. In a large bowl, whisk together the Greek yogurt, eggs, honey, oil, and vanilla extract until smooth.
  3. In another bowl, mix the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir gently until just combined. Do not overmix.
  5. Add the lemon zest if using and mix lightly.
  6. Pour the batter into the prepared pan.
  7. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool before slicing and serving.

TIPS

  • Use non-fat Greek yogurt to reduce calories
  • Replace oil with applesauce for a lighter version
  • Add fresh fruit instead of frosting
  • You can use a sugar-free sweetener instead of honey
