LOW-CALORIE GREEK YOGURT CAKE
INGREDIENTS
- 1 cup plain Greek yogurt (low-fat or non-fat)
- 2 large eggs
- 1/3 cup honey or maple syrup (or low-calorie sweetener)
- 1/4 cup vegetable oil (or unsweetened applesauce)
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour (or oat flour)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Pinch of salt
- Zest of 1 lemon (optional)
INSTRUCTIONS
- Preheat oven to 180°C (350°F). Grease or line a baking pan.
- In a large bowl, whisk together the Greek yogurt, eggs, honey, oil, and vanilla extract until smooth.
- In another bowl, mix the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture and stir gently until just combined. Do not overmix.
- Add the lemon zest if using and mix lightly.
- Pour the batter into the prepared pan.
- Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool before slicing and serving.
TIPS
- Use non-fat Greek yogurt to reduce calories
- Replace oil with applesauce for a lighter version
- Add fresh fruit instead of frosting
- You can use a sugar-free sweetener instead of honey
