Fried Chicken Gizzards
Ingredients:
- 1 lb chicken gizzards (cleaned)
- 2 cups buttermilk (or milk + 1 tbsp lemon juice)
- 1 1/2 cups all-purpose flour
- 1/2 cup cornstarch
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper (optional)
- Oil for frying
Instructions:
- Soak the gizzards
Place the gizzards in buttermilk and leave them for at least 1–2 hours. - Boil until tender
Put them in a pot, cover with water, add a little salt, and cook for 30–45 minutes until tender. Drain. - Prepare coating
Mix flour, cornstarch, salt, pepper, garlic powder, onion powder, paprika, and cayenne. - Coat the gizzards
Dip each piece in buttermilk, then coat well in the flour mixture. - Fry
Heat oil to 175°C and fry for 4–6 minutes until golden and crispy. - Serve
Remove and place on paper towels. Serve hot.
Tips:
- Boiling makes them soft, not chewy
- Cornstarch gives extra crispiness
- Fry in small batches
