Fried Chicken Gizzards

 Ingredients:

  • 1 lb chicken gizzards (cleaned)
  • 2 cups buttermilk (or milk + 1 tbsp lemon juice)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • Oil for frying

 Instructions:

  1. Soak the gizzards
    Place the gizzards in buttermilk and leave them for at least 1–2 hours.
  2. Boil until tender
    Put them in a pot, cover with water, add a little salt, and cook for 30–45 minutes until tender. Drain.
  3. Prepare coating
    Mix flour, cornstarch, salt, pepper, garlic powder, onion powder, paprika, and cayenne.
  4. Coat the gizzards
    Dip each piece in buttermilk, then coat well in the flour mixture.
  5. Fry
    Heat oil to 175°C and fry for 4–6 minutes until golden and crispy.
  6. Serve
    Remove and place on paper towels. Serve hot.

 Tips:

  • Boiling makes them soft, not chewy
  • Cornstarch gives extra crispiness
  • Fry in small batches
