Vegetable Soup (Healthy & Easy)

 Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 cup broccoli florets
  • 1 zucchini, chopped
  • 1 celery stalk, chopped
  • 1 tomato, chopped (optional)
  • 5 cups vegetable broth (or chicken broth)
  • Salt and pepper to taste
  • 1/2 teaspoon turmeric (optional)
  • Fresh parsley or cilantro, chopped

 Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic, and cook until soft and fragrant.
  3. Add the carrots, potatoes, celery, and zucchini. Stir for 3–4 minutes.
  4. Pour in the broth and bring to a boil.
  5. Reduce the heat and let it simmer for 15–20 minutes.
  6. Add the broccoli and tomato, and cook for another 5–7 minutes.
  7. Season with salt, pepper, and turmeric.
  8. Garnish with fresh parsley or cilantro and serve hot.

Tips:

  • You can add chicken or beef for extra protein
  • Blend the soup for a creamy texture
  • A squeeze of lemon at the end adds great flavor
