Slow Cooker Ground Beef & Potato Stew
Ingredients:
- 1 lb (450 g) ground beef
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz / 400 g) diced tomatoes
- 2 cups beef broth
- 2 tbsp tomato paste
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp cumin (optional)
- Salt and black pepper to taste
- 2 tbsp olive oil
Instructions:
- Brown the beef
Heat a pan over medium heat. Add the ground beef and cook until fully browned. Drain excess fat. - Cook the onion and garlic
Add chopped onion and garlic to the pan. Cook for 2–3 minutes until soft and fragrant. - Transfer to slow cooker
Add the beef mixture to the slow cooker. - Add remaining ingredients
Add potatoes, diced tomatoes, tomato paste, beef broth, and all spices. - Cook
- On LOW: 6–7 hours
- On HIGH: 3–4 hours
Cook until the potatoes are tender.
- Final step
Taste and adjust seasoning with salt and pepper if needed.
Tips:
- Mash a few potatoes at the end to make the stew thicker.
- You can add carrots or bell peppers for extra flavor.
- Serve hot with bread or rice.
