 Slow Cooker Ground Beef & Potato Stew

Ingredients:

  • 1 lb (450 g) ground beef
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz / 400 g) diced tomatoes
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp cumin (optional)
  • Salt and black pepper to taste
  • 2 tbsp olive oil

Instructions:

  1. Brown the beef
    Heat a pan over medium heat. Add the ground beef and cook until fully browned. Drain excess fat.
  2. Cook the onion and garlic
    Add chopped onion and garlic to the pan. Cook for 2–3 minutes until soft and fragrant.
  3. Transfer to slow cooker
    Add the beef mixture to the slow cooker.
  4. Add remaining ingredients
    Add potatoes, diced tomatoes, tomato paste, beef broth, and all spices.
  5. Cook
    • On LOW: 6–7 hours
    • On HIGH: 3–4 hours
      Cook until the potatoes are tender.
  6. Final step
    Taste and adjust seasoning with salt and pepper if needed.

Tips:

  • Mash a few potatoes at the end to make the stew thicker.
  • You can add carrots or bell peppers for extra flavor.
  • Serve hot with bread or rice.
