Slow Cooker Crack Chicken and Rice

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (8 oz) package cream cheese, softened
  • 1 (1 oz) packet ranch seasoning mix
  • 1 1/2 cups uncooked long-grain white rice
  • 3 cups chicken broth

Instructions

  1. Add the chicken
    Place the chicken breasts in the bottom of your slow cooker.
  2. Mix the sauce
    In a bowl, combine the cream of chicken soup, softened cream cheese, and ranch seasoning mix. Stir until smooth.
  3. Pour over chicken
    Spread the mixture evenly over the chicken.
  4. Cook
    Cover and cook on:

    • Low: 6–7 hours
    • High: 3–4 hours
  5. Shred the chicken
    Once cooked, shred the chicken directly in the slow cooker using two forks.
  6. Add rice and broth
    Stir in the uncooked rice and chicken broth. Mix well.
  7. Cook again
    Cover and cook on High for 1–2 hours, or until the rice is tender and fully cooked. Stir occasionally if possible.

Optional Add-Ins 

  • 1–2 cups shredded cheddar cheese
  • Cooked bacon bits
  • Chopped green onions

Tips

  • If the rice absorbs too much liquid, add a splash of broth.
  • For extra creaminess, stir in a little more cream cheese at the end.
  • Make sure the rice is fully submerged to cook evenly.
