Creamy Cheesy Beef & Tomato Dip
Ingredients:
- 1 lb (450g) ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (10 oz) diced tomatoes (with juices)
- 1/2 cup diced green bell pepper
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese (softened)
- 1/2 cup heavy cream or milk
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt (adjust to taste)
- 1/2 teaspoon chili flakes (optional, for a little heat)
Instructions:
- Cook the beef
In a large skillet or pot, heat olive oil over medium heat. Add the ground beef and cook until browned. Drain excess fat if needed. - Add aromatics
Add chopped onion and cook for 2–3 minutes until soft. Stir in garlic and cook for another 30 seconds. - Add vegetables
Mix in diced tomatoes and green bell pepper. Let it simmer for about 5 minutes so the flavors combine. - Make it creamy
Lower the heat and add cream cheese, heavy cream, and shredded cheddar cheese. Stir continuously until everything melts into a smooth, creamy mixture. - Season
Add paprika, salt, pepper, and chili flakes. Taste and adjust seasoning as needed. - Simmer
Let it cook on low heat for another 5–10 minutes until thick and bubbly.
Serving Suggestions:
- Serve hot with tortilla chips, toasted bread, or crackers
- Also great as a topping for baked potatoes or even pasta
Tip:
For extra flavor, you can add a little taco seasoning or a splash of hot sauce
