Crispy Garlic Butter Roasted Potatoes

They’re crispy on the outside, soft on the inside, and packed with flavor

Ingredients

  • 2 lbs potatoes (Yukon gold or baby potatoes work best)
  • 3 tablespoons olive oil
  • 3 tablespoons butter, melted
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley (or fresh)
  • Optional: grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the potatoes into halves or bite-sized pieces.
  3. In a large bowl, mix olive oil, melted butter, garlic, salt, pepper, and paprika.
  4. Add the potatoes and toss until fully coated.
  5. Spread them on a baking sheet in a single layer.
  6. Roast for 35–45 minutes, flipping halfway through, until golden and crispy.
  7. Sprinkle with parsley and Parmesan before serving.
