 Garlic Butter Beef Bites with Creamy Mashed Potatoes

 Ingredients

For the Beef Bites:

  • 1 lb (450 g) beef steak (sirloin or ribeye), cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme or Italian seasoning
  • 1 tablespoon fresh parsley, chopped (for garnish)

For the Creamy Mashed Potatoes:

  • 2 lbs (900 g) potatoes, peeled and cut into chunks
  • 4 tablespoons butter
  • ½ cup warm milk (or heavy cream for extra richness)
  • Salt and black pepper, to taste

 Instructions

1. Make the Mashed Potatoes

  1. Place the peeled potatoes in a large pot and cover with salted water.
  2. Bring to a boil and cook for about 15–20 minutes, or until fork-tender.
  3. Drain well and return potatoes to the pot.
  4. Add butter and warm milk, then mash until smooth and creamy.
  5. Season with salt and pepper to taste. Cover and keep warm.

2. Cook the Beef Bites

  1. Pat the beef cubes dry with paper towels (this helps them sear better).
  2. Season with salt, pepper, paprika, and thyme.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add beef in a single layer (work in batches if needed).
  5. Sear for 2–3 minutes per side until browned and cooked to your liking.
  6. Reduce heat to medium, then add butter and minced garlic.
  7. Stir and spoon the melted garlic butter over the beef for 1–2 minutes until fragrant.

3. Assemble & Serve

  1. Spoon a generous portion of mashed potatoes onto each plate.
  2. Top with garlic butter beef bites.
  3. Drizzle extra garlic butter from the pan over everything.
  4. Sprinkle with fresh parsley for a fresh finish.
