 Chicken Parmesan Grilled Cheese Sandwich

Ingredients:

  • 2 slices of bread (sourdough or any sturdy bread works best)
  • 1 cup cooked chicken breast, shredded or sliced
  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 1–2 tablespoons butter (softened)
  • Salt and black pepper (to taste)
  • 1/2 teaspoon Italian seasoning (optional)

 Instructions:

  1. Prepare the chicken filling: In a skillet over medium heat, combine the cooked chicken and marinara sauce. Stir well and let it heat through for about 3–5 minutes. Season with salt, pepper, and Italian seasoning if desired.
  2. Butter the bread: Spread butter evenly on one side of each slice of bread. These will be the outer sides for grilling.
  3. Assemble the sandwich:
    • Place one slice of bread in a pan, buttered side down
    • Add a layer of mozzarella cheese
    • Spoon the chicken marinara mixture evenly on top
    • Sprinkle Parmesan cheese over the chicken
    • Add another layer of mozzarella
    • Top with the second slice of bread, buttered side up
  4. Cook the sandwich: Grill over medium-low heat for about 3–4 minutes per side, or until the bread is golden brown and crispy and the cheese is fully melted. Press gently with a spatula while cooking.
  5. Serve: Remove from the pan, let it cool slightly, then slice in half and serve warm.

 Tips:

  • Add fresh basil or garlic butter for extra flavor
  • Use leftover rotisserie chicken for convenience
  • Serve with fries, soup, or a simple salad
