Slow Cooker Beef Roast with Onion Gravy
Ingredients
- 2–3 lbs beef chuck roast
- 2 tablespoons olive oil
- 2 large onions, sliced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 2 tablespoons cornstarch
- 2 tablespoons cold water
Instructions
- Season the beef
Pat the beef roast dry with paper towels. Season all sides with salt, pepper, and paprika. - Sear the meat (optional but recommended)
Heat olive oil in a large skillet over medium-high heat. Sear the roast for about 3–4 minutes per side until nicely browned. This step adds extra flavor. - Prepare the slow cooker
Place the sliced onions and minced garlic in the bottom of the slow cooker. Set the seared beef roast on top. - Make the sauce
In a bowl, mix the beef broth, Worcestershire sauce, soy sauce, brown sugar, and thyme. Pour this mixture over the beef and onions. - Slow cook
Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef becomes very tender and easily shreds with a fork. - Thicken the gravy
In a small bowl, mix cornstarch with cold water to make a slurry. Stir it into the slow cooker during the last 20 minutes of cooking. This will thicken the onion gravy. - Serve
Shred or slice the beef and spoon the rich onion gravy over the top.
