 Ingredients

  • 4 large russet potatoes, peeled and thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk (whole milk works best)
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese

 Instructions

  1. Preheat the oven
    Preheat your oven to 375°F (190°C). Lightly grease a baking dish with butter or cooking spray.
  2. Prepare the potatoes
    Peel and slice the potatoes into thin, even slices (about ⅛ inch thick). This helps them cook evenly and absorb the creamy sauce.
  3. Make the cheese sauce
    In a medium saucepan, melt the butter over medium heat. Add the chopped onion and cook for about 3–4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds.
  4. Create the roux
    Sprinkle the flour over the onion mixture and whisk constantly for about 1 minute to remove the raw flour taste.
  5. Add milk and cream
    Slowly pour in the milk and heavy cream while whisking continuously. Cook until the sauce thickens slightly, about 3–5 minutes.
  6. Add the cheese
    Stir in the cheddar cheese and Parmesan cheese. Continue stirring until the cheese melts and the sauce becomes smooth and creamy. Season with salt, pepper, and paprika.
  7. Layer the potatoes
    Arrange half of the sliced potatoes in the baking dish. Pour half of the cheese sauce over them. Add the remaining potatoes and cover with the rest of the sauce.
  8. Bake the dish
    Cover the dish with foil and bake for 40 minutes. Then remove the foil and bake for another 20–25 minutes until the top is golden and the potatoes are tender.
  9. Rest and serve
    Let the dish rest for 10 minutes before serving. Garnish with fresh parsley for extra flavor and color.
