If you love the comforting taste of peach cobbler and the creamy richness of cheesecake, this dessert combines both into one irresistible treat. Sweet juicy peaches are mixed into a fluffy cheesecake filling and topped with a buttery graham cracker crumble that tastes just like cobbler topping. It’s quick, refreshing, and perfect for potlucks, family dinners, or summer gatherings.

Ingredients

  • 8 oz cream cheese, softened
  • 1 (3.4 oz) package instant cheesecake pudding mix
  • 1 cup French vanilla coffee creamer
  • 8 medium peaches, diced
  • 1/2 cup brown sugar
  • 4 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 9 graham crackers, crushed
  • 2 teaspoons sugar

Instructions

1. Prepare the cheesecake mixture
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the instant cheesecake pudding mix and French vanilla creamer. Whisk or beat with a mixer for about 2 minutes until the mixture becomes thick and smooth.

2. Add the peaches
Gently fold the diced peaches into the cheesecake mixture until they are evenly coated. Set aside.

3. Make the cobbler crumble
In a skillet over medium heat, melt the butter. Add the crushed graham crackers, brown sugar, cinnamon, nutmeg, salt, vanilla extract, and 2 teaspoons of sugar. Stir constantly for about 3–4 minutes until the mixture becomes golden and slightly crisp.

4. Let the topping cool
Remove the crumble mixture from the heat and let it cool completely. This will help it become crunchy.

5. Assemble the salad
Pour the peach cheesecake mixture into a serving bowl. Sprinkle the cobbler-style graham cracker crumble over the top just before serving.

  • Chill the salad for 30–60 minutes before serving for the best flavor.
