Cottage Cheese Chocolate Chip Cookies

Ingredients
- 1 cup cottage cheese
- 1 1/4 cups rolled oats
- 1/4 cup honey
- 1 large egg
- 1/4 cup mini chocolate chips (plus extra for topping)
- 1 teaspoon vanilla extract
Optional (for more flavor)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Blend the cottage cheese in a blender or food processor until smooth. This helps the cookies have a softer texture.
- In a large bowl, mix the blended cottage cheese, honey, egg, and vanilla extract until well combined.
- Add the rolled oats, baking powder, cinnamon, and salt (if using). Stir until everything is evenly mixed.
- Fold in the mini chocolate chips.
- Scoop about 1–2 tablespoons of dough onto the prepared baking sheet. Slightly flatten each cookie with the back of a spoon.
- Sprinkle a few extra chocolate chips on top of each cookie.
- Bake for 12–15 minutes, or until the cookies are set and lightly golden.
- Let the cookies cool for 5–10 minutes before serving.
Tips
- For smoother cookies, you can blend the oats into oat flour first.
- Store cookies in the refrigerator for up to 4 days.
- They are great as a healthy snack or quick breakfast.
