Asparagus Stuffed Chicken Breast

A simple but elegant dinner! Juicy chicken breasts are filled with tender asparagus and melted cheese, then baked until golden and flavorful. Perfect for a healthy weeknight meal or a special dinner.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 12–16 fresh asparagus spears, trimmed
  • 4 slices mozzarella or provolone cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • ½ cup grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Prepare the chicken: Using a sharp knife, cut a pocket into the side of each chicken breast.
  3. Stuff the chicken: Place 3–4 asparagus spears and a slice of cheese inside each chicken breast.
  4. Season: Rub the outside of the chicken with olive oil, garlic, paprika, Italian seasoning, salt, and pepper. Sprinkle Parmesan cheese on top if using.
  5. Bake: Place chicken in the prepared baking dish and bake for 25–30 minutes, or until the chicken is fully cooked (internal temperature 165°F / 74°C).
  6. Serve: Let rest for a few minutes before serving. Serve with rice, roasted potatoes, or a fresh salad.

Tip: You can wrap the stuffed chicken with bacon before baking for extra flavor and crispiness!
