Asparagus Stuffed Chicken Breast
A simple but elegant dinner! Juicy chicken breasts are filled with tender asparagus and melted cheese, then baked until golden and flavorful. Perfect for a healthy weeknight meal or a special dinner.
Ingredients
- 4 boneless, skinless chicken breasts
- 12–16 fresh asparagus spears, trimmed
- 4 slices mozzarella or provolone cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- ½ cup grated Parmesan cheese (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Prepare the chicken: Using a sharp knife, cut a pocket into the side of each chicken breast.
- Stuff the chicken: Place 3–4 asparagus spears and a slice of cheese inside each chicken breast.
- Season: Rub the outside of the chicken with olive oil, garlic, paprika, Italian seasoning, salt, and pepper. Sprinkle Parmesan cheese on top if using.
- Bake: Place chicken in the prepared baking dish and bake for 25–30 minutes, or until the chicken is fully cooked (internal temperature 165°F / 74°C).
- Serve: Let rest for a few minutes before serving. Serve with rice, roasted potatoes, or a fresh salad.
Tip: You can wrap the stuffed chicken with bacon before baking for extra flavor and crispiness!
