 Slow Cooker Cream Cheese Corn Casserole

A rich, creamy, and super easy side dish made right in the slow cooker. Perfect for family dinners, BBQs, or holidays!

 Ingredients

  • 4 cups frozen corn (or 2 cans corn, drained)
  • 1 package (8 oz) cream cheese, cubed
  • ½ cup unsalted butter
  • ½ cup milk
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup shredded cheddar cheese (optional)
  • 2 tablespoons chopped parsley (optional for garnish)

 Instructions

  1. Prepare the slow cooker:
    Lightly grease the inside of your slow cooker.
  2. Add ingredients:
    Place the corn, cream cheese, butter, and milk into the slow cooker.
  3. Season:
    Add garlic powder, salt, and black pepper. Stir gently to combine.
  4. Cook:
    Cover and cook on LOW for 3–4 hours or HIGH for 2 hours, stirring once or twice during cooking.
  5. Add cheese (optional):
    About 20 minutes before serving, stir in the shredded cheddar cheese for extra flavor.
  6. Serve:
    Stir well until creamy and smooth. Garnish with parsley and serve warm.

 Tips

  • Add crispy bacon bits for extra flavor.
  • A pinch of paprika or chili flakes adds a nice kick.
  • Great as a side dish with roast chicken, steak, or BBQ meats.
