Loaded Grilled Chicken Salad

A fresh, hearty salad packed with juicy grilled chicken, crispy bacon, crunchy veggies, and a creamy dressing. Perfect for lunch or a light dinner!

Ingredients

For the Chicken

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Salad

  • 6 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • ½ cup shredded cheddar cheese
  • 4 slices cooked bacon, chopped
  • ¼ cup red onion, thinly sliced
  • 1 hard-boiled egg, sliced

For the Dressing

  • ½ cup ranch dressing (or your favorite dressing)

Instructions

  1. Season the Chicken
    Rub the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.
  2. Grill the Chicken
    Heat a grill or grill pan over medium-high heat. Grill the chicken for about 5–7 minutes per side, or until fully cooked. Let it rest for a few minutes, then slice.
  3. Prepare the Salad Base
    In a large bowl, add the chopped romaine lettuce, tomatoes, avocado, red onion, and cheddar cheese.
  4. Add the Toppings
    Top the salad with sliced grilled chicken, chopped bacon, and sliced hard-boiled egg.
  5. Add Dressing & Serve
    Drizzle ranch dressing over the salad and toss lightly, or serve the dressing on the side.

Tip: You can also add cucumbers, corn, or croutons for extra crunch.
