Hearty Beef & Rice Casserole With Cheese
Ingredients
- 1 lb (450 g) ground beef
- 1 cup uncooked white rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (14.5 oz) diced tomatoes, drained
- 2 cups beef broth
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1½ cups shredded cheddar cheese
- 1 tablespoon olive oil
- Fresh parsley, chopped (optional for garnish)
Instructions
- Preheat the oven to 350°F (180°C). Lightly grease a 9×13-inch baking dish.
- Cook the beef
Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. - Add onion and garlic
Stir in the chopped onion and cook for about 3–4 minutes until softened. Add the minced garlic and cook for another minute until fragrant. - Combine ingredients
In a large mixing bowl, combine the cooked beef mixture, uncooked rice, cream of mushroom soup, diced tomatoes, beef broth, salt, black pepper, paprika, and Italian seasoning. Mix everything well. - Assemble the casserole
Pour the mixture into the prepared baking dish and spread it evenly. - Bake
Cover the dish tightly with aluminum foil and bake for 40 minutes. - Add the cheese
Remove the foil, sprinkle the shredded cheddar cheese evenly over the top, and return to the oven. Bake for another 10–15 minutes, or until the cheese is melted and bubbly. - Serve
Let the casserole rest for about 5 minutes before serving. Garnish with fresh parsley if desired.
