Classic Meatloaf with Roasted Potatoes
This classic American meatloaf with roasted potatoes is a comforting, hearty meal that’s perfect for family dinners. The meatloaf is juicy and flavorful, topped with a sweet and tangy glaze, while the seasoned potatoes roast around it until golden and crispy.
Ingredients
For the Meatloaf
- 2 lbs ground beef
- 1 cup breadcrumbs
- 1 large egg
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup milk
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried parsley
For the Glaze
- 1/3 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon yellow mustard
For the Roasted Potatoes
- 4 medium potatoes, cut into cubes
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
Instructions
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine the ground beef, breadcrumbs, egg, chopped onion, garlic, milk, ketchup, Worcestershire sauce, salt, pepper, paprika, and dried parsley.
- Mix everything together until well combined, but do not overmix or the meatloaf may become dense.
- Shape the mixture into a loaf and place it in a baking dish or foil pan.
- In a small bowl, mix the ketchup, brown sugar, and mustard to make the glaze. Spread it evenly over the top of the meatloaf.
- In another bowl, toss the cubed potatoes with olive oil, salt, pepper, paprika, and garlic powder until well coated.
- Arrange the seasoned potatoes around the meatloaf in the pan.
- Bake for 50–60 minutes, or until the meatloaf is fully cooked and the potatoes are golden brown and tender.
- Remove from the oven and let the meatloaf rest for about 5 minutes before slicing.
Serving
Slice the meatloaf and serve it hot with the roasted potatoes. This dish also pairs well with green beans, a fresh salad, or steamed vegetables.
