This classic American meatloaf with roasted potatoes is a comforting, hearty meal that’s perfect for family dinners. The meatloaf is juicy and flavorful, topped with a sweet and tangy glaze, while the seasoned potatoes roast around it until golden and crispy.

Ingredients

For the Meatloaf

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 1 large egg
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup milk
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley

For the Glaze

  • 1/3 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard

For the Roasted Potatoes

  • 4 medium potatoes, cut into cubes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, chopped onion, garlic, milk, ketchup, Worcestershire sauce, salt, pepper, paprika, and dried parsley.
  3. Mix everything together until well combined, but do not overmix or the meatloaf may become dense.
  4. Shape the mixture into a loaf and place it in a baking dish or foil pan.
  5. In a small bowl, mix the ketchup, brown sugar, and mustard to make the glaze. Spread it evenly over the top of the meatloaf.
  6. In another bowl, toss the cubed potatoes with olive oil, salt, pepper, paprika, and garlic powder until well coated.
  7. Arrange the seasoned potatoes around the meatloaf in the pan.
  8. Bake for 50–60 minutes, or until the meatloaf is fully cooked and the potatoes are golden brown and tender.
  9. Remove from the oven and let the meatloaf rest for about 5 minutes before slicing.

Serving

Slice the meatloaf and serve it hot with the roasted potatoes. This dish also pairs well with green beans, a fresh salad, or steamed vegetables.

Tip: For extra flavor and moisture, you can mix a little grated cheese or finely chopped bell peppers into the meat mixture.
