Ultimate Garlic Herb Roasted Chicken with Baby Potatoes & Green Beans

 Ingredients

For the Chicken

  • 4 bone-in, skin-on chicken thighs (or drumsticks)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Vegetables

  • 1 lb baby potatoes, halved
  • 2 cups fresh green beans, trimmed
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Optional Garnish

  • Fresh parsley, chopped
  • Lemon wedges

 Instructions

  1. Preheat the oven
    Preheat your oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
  2. Prepare the garlic herb marinade
    In a small bowl, mix olive oil, minced garlic, thyme, rosemary, oregano, paprika, salt, and black pepper.
  3. Season the chicken
    Rub the garlic herb mixture all over the chicken pieces, making sure they are evenly coated.
  4. Prepare the vegetables
    In a large bowl, toss the baby potatoes and green beans with olive oil, salt, and pepper.
  5. Arrange everything on the pan
    Place the seasoned chicken in the center of the baking sheet. Spread the potatoes and green beans around the chicken.
  6. Roast the chicken
    Bake for 35–45 minutes, or until the chicken is golden brown and cooked through (internal temperature 165°F / 75°C).
  7. Serve
    Garnish with fresh parsley and serve with lemon wedges for extra flavor.
