Ingredients
For the Chicken
- 4 bone-in, skin-on chicken thighs (or drumsticks)
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
For the Vegetables
- 1 lb baby potatoes, halved
- 2 cups fresh green beans, trimmed
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper

- Fresh parsley, chopped
- Lemon wedges
Instructions
- Preheat the oven
Preheat your oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan. - Prepare the garlic herb marinade
In a small bowl, mix olive oil, minced garlic, thyme, rosemary, oregano, paprika, salt, and black pepper. - Season the chicken
Rub the garlic herb mixture all over the chicken pieces, making sure they are evenly coated. - Prepare the vegetables
In a large bowl, toss the baby potatoes and green beans with olive oil, salt, and pepper. - Arrange everything on the pan
Place the seasoned chicken in the center of the baking sheet. Spread the potatoes and green beans around the chicken. - Roast the chicken
Bake for 35–45 minutes, or until the chicken is golden brown and cooked through (internal temperature 165°F / 75°C). - Serve
Garnish with fresh parsley and serve with lemon wedges for extra flavor.
