Slow Cooker Pork Chops with Onions and Creamy Gravy

This classic American slow cooker recipe is the perfect comfort food. Tender pork chops cook slowly over a bed of sliced onions and are covered in a rich, creamy gravy. The result is juicy, flavorful meat that practically falls apart and a delicious sauce that pairs perfectly with mashed potatoes, rice, or buttered noodles.

Ingredients

  • 4 bone-in pork chops (about 1 inch thick)
  • 2 large onions, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme (optional)
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil or butter
  • 1 tablespoon cornstarch (optional, for thicker gravy)
  • 2 tablespoons water (for cornstarch slurry)
  • Fresh parsley, chopped (optional for garnish)

Instructions

1. Prepare the slow cooker
Start by placing the sliced onions in the bottom of your slow cooker. Spread them evenly to create a bed for the pork chops. The onions will add flavor and keep the meat from sticking.

2. Season the pork chops
Pat the pork chops dry with a paper towel. Season both sides with salt, black pepper, garlic powder, onion powder, paprika, and dried thyme if using.

3. Optional searing step (adds extra flavor)
Heat olive oil or butter in a skillet over medium-high heat. Sear the pork chops for about 2 minutes per side until lightly golden. This step is optional but helps add deeper flavor.

4. Add pork chops to the slow cooker
Place the seasoned pork chops directly on top of the sliced onions inside the slow cooker.

5. Make the creamy sauce
In a mixing bowl, whisk together the cream of mushroom soup and chicken broth until smooth. Pour the mixture evenly over the pork chops.

6. Cook slowly
Cover the slow cooker with the lid and cook:

  • Low: 6–7 hours
  • High: 3–4 hours

The pork chops should become very tender and easy to cut with a fork.

7. Thicken the gravy (optional)
If you prefer a thicker gravy, mix 1 tablespoon cornstarch with 2 tablespoons water to create a slurry. Stir it into the sauce during the last 20 minutes of cooking and let it thicken.

8. Serve
Carefully remove the pork chops and spoon the onion gravy over the top. Garnish with chopped parsley if desired.
