Berry Pie Bars

Ingredients

For the Crust and Topping:

  • 2 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ¼ teaspoon salt
  • 1 cup cold unsalted butter, cubed
  • 1 large egg

For the Berry Filling:

  • 3 cups mixed berries (strawberries, raspberries, blueberries, or cherries)
  • ¾ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, mix flour, sugar, and salt.
  3. Cut in the cold butter using a pastry cutter or fork until the mixture becomes crumbly.
  4. Add the egg and mix until a soft dough forms.
  5. Press two-thirds of the dough evenly into the bottom of the prepared pan to form the crust.
  6. In another bowl, combine berries, sugar, cornstarch, lemon juice, and vanilla extract.
  7. Spread the berry mixture evenly over the crust.
  8. Crumble the remaining dough over the top of the berries.
  9. Bake for 40–45 minutes, or until the top is golden brown and the filling is bubbly.
  10. Allow the bars to cool completely, then cut into squares and serve.
