Berry Pie Bars
Ingredients
For the Crust and Topping:
- 2 ½ cups all-purpose flour
- 1 cup granulated sugar
- ¼ teaspoon salt
- 1 cup cold unsalted butter, cubed
- 1 large egg
For the Berry Filling:
- 3 cups mixed berries (strawberries, raspberries, blueberries, or cherries)
- ¾ cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a large bowl, mix flour, sugar, and salt.
- Cut in the cold butter using a pastry cutter or fork until the mixture becomes crumbly.
- Add the egg and mix until a soft dough forms.
- Press two-thirds of the dough evenly into the bottom of the prepared pan to form the crust.
- In another bowl, combine berries, sugar, cornstarch, lemon juice, and vanilla extract.
- Spread the berry mixture evenly over the crust.
- Crumble the remaining dough over the top of the berries.
- Bake for 40–45 minutes, or until the top is golden brown and the filling is bubbly.
- Allow the bars to cool completely, then cut into squares and serve.
