Chocolate Caramel Cornflake Clusters

Ingredients

  • 3 cups cornflakes cereal
  • 1 (11 oz) bag soft caramels, unwrapped
  • 2 tablespoons heavy cream
  • 1 ½ cups milk chocolate chips
  • 1 tablespoon unsalted butter (optional, for smoother chocolate)

Instructions

1. Prepare the cereal
Place the cornflakes in a large mixing bowl and set aside.

2. Melt the caramel
In a medium saucepan over low heat, combine the unwrapped caramels and heavy cream. Stir constantly until fully melted and smooth.

3. Coat the cornflakes
Pour the melted caramel over the cornflakes. Gently fold until the cereal is evenly coated.

4. Shape the clusters
Using a spoon or cookie scoop, drop small mounds onto a parchment-lined baking sheet.
(You can also press the mixture into silicone molds for fun shapes.)
Let them sit at room temperature for about 20 minutes to firm up.

5. Melt the chocolate
Microwave the chocolate chips in 20–30 second intervals, stirring between each, until smooth. Stir in butter if using.

6. Top with chocolate
Spoon melted chocolate over each cluster, spreading slightly to cover the tops.

7. Set
Refrigerate for 20–30 minutes, or until the chocolate is completely set.

 Storage

Store in an airtight container at room temperature for up to 5 days, or refrigerate for longer freshness.
