Cheesy Baked Potato Casserole
Ingredients:
- 4 cups mashed potatoes (about 5–6 medium potatoes)
- 1 cup sour cream
- ½ cup milk
- 2 tablespoons butter, melted
- 2 cups shredded cheddar cheese (divided)
- 2 eggs
- ¼ cup chopped fresh parsley (or green onions)
- Salt and black pepper to taste
Instructions:
- Preheat oven to 375°F (190°C).
- Boil potatoes until soft, then mash until smooth.
- In a large bowl, mix mashed potatoes, sour cream, milk, melted butter, eggs, parsley, salt, and pepper.
- Stir in 1½ cups of the shredded cheese.
- Pour mixture into a greased baking dish.
- Sprinkle remaining cheese on top.
- Bake for 35–40 minutes until golden brown and set in the center.
- Let it cool slightly before slicing.
Optional: Add cooked ground beef, shredded chicken, or sautéed spinach inside for a heartier version.
