 Cheesy Baked Potato Casserole

 Ingredients:

  • 4 cups mashed potatoes (about 5–6 medium potatoes)
  • 1 cup sour cream
  • ½ cup milk
  • 2 tablespoons butter, melted
  • 2 cups shredded cheddar cheese (divided)
  • 2 eggs
  • ¼ cup chopped fresh parsley (or green onions)
  • Salt and black pepper to taste

 Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Boil potatoes until soft, then mash until smooth.
  3. In a large bowl, mix mashed potatoes, sour cream, milk, melted butter, eggs, parsley, salt, and pepper.
  4. Stir in 1½ cups of the shredded cheese.
  5. Pour mixture into a greased baking dish.
  6. Sprinkle remaining cheese on top.
  7. Bake for 35–40 minutes until golden brown and set in the center.
  8. Let it cool slightly before slicing.

Optional: Add cooked ground beef, shredded chicken, or sautéed spinach inside for a heartier version.
