No-Bake Chocolate Peanut Butter Oat Bars

These rich and chewy bars have a thick chocolate center layered between sweet oat and peanut butter goodness — and they’re super easy to make!

Ingredients

Oat Layer:

  • 2 cups old-fashioned rolled oats
  • 1 cup peanut butter
  • ½ cup honey or brown sugar
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Chocolate Layer:

  • 1 cup chocolate chips
  • ½ cup peanut butter

Optional Topping:

  • Melted chocolate for drizzling

 Instructions

  1. Prepare the oat mixture:
    In a saucepan over medium heat, melt the butter, honey (or brown sugar), and peanut butter together. Stir until smooth and fully combined. Add vanilla and salt.
  2. Remove from heat and stir in the oats until well coated.
  3. Line an 8×8-inch pan with parchment paper. Press half of the oat mixture firmly into the bottom of the pan.
  4. Make the chocolate layer:
    Melt the chocolate chips and peanut butter together (microwave in 30-second intervals, stirring each time, or use a double boiler). Stir until smooth.
  5. Pour the chocolate mixture evenly over the oat base.
  6. Crumble and gently press the remaining oat mixture on top.
  7. Drizzle extra melted chocolate over the top if desired.
  8. Refrigerate for at least 2 hours, or until fully set.
  9. Slice into squares and enjoy!

 Tips

  • Add chopped nuts for extra crunch.
  • Store in the refrigerator for up to 1 week.
  • You can substitute almond butter for peanut butter if preferred.
