Irresistible Buckeye Brownie Bites – Chocolate + Peanut Butter Heaven!
Soft, fudgy brownie bites topped with creamy peanut butter centers and finished with a rich chocolate drizzle. The perfect bite-sized dessert for parties or sweet cravings!
Ingredients
Peanut Butter Balls:
- ½ cup peanut butter
- 2 tablespoons butter, softened
- ¾ cup powdered sugar
Brownie Bites:
- ½ cup vegetable oil
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- ⅓ cup cocoa powder
- ½ cup all-purpose flour
- ¼ teaspoon salt
- ¼ teaspoon baking powder
Chocolate Drizzle:
- 3 tablespoons butter, melted
- 3 tablespoons cocoa powder
- 1 tablespoon corn syrup or honey
- ½ cup powdered sugar
- 1–2 tablespoons milk or cream
Instructions
Step 1: Prepare the Peanut Butter Balls
- In a medium bowl, mix peanut butter and softened butter until smooth.
- Add powdered sugar gradually and mix until combined.
- Roll into small balls (about 1 inch).
- Place on a lined tray and freeze for 20–30 minutes to firm up.
Step 2: Make the Brownie Batter
- Preheat oven to 350°F (175°C).
- Grease or line a mini muffin pan.
- In a bowl, whisk together oil and sugar.
- Add eggs and vanilla extract, mix well.
- Stir in cocoa powder, flour, salt, and baking powder until just combined.
Step 3: Bake the Brownie Bites
- Fill each mini muffin cup about ¾ full with brownie batter.
- Bake for 10–12 minutes, until centers are set but still fudgy.
- Remove from oven and gently press one peanut butter ball into the center of each warm brownie.
- Let cool completely.
Step 4: Make the Chocolate Drizzle
- In a bowl, whisk melted butter and cocoa powder until smooth.
- Add corn syrup (or honey) and powdered sugar.
- Stir in milk/cream, one tablespoon at a time, until smooth and drizzle-ready consistency.
Step 5: Finish & Serve
- Drizzle chocolate over each brownie bite.
- Let set before serving.
