 Rotel Cream Cheese Sausage Balls

 Ingredients:

  • 1 lb hot sausage, uncooked
  • 1 (8 oz) package cream cheese, softened
  • 1 (10 oz) can Rotel diced tomatoes and green chilies, drained
  • 1 ½ cups shredded cheddar cheese
  • 2 cups baking mix (like Bisquick)

 Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, combine the uncooked sausage and softened cream cheese. Mix well until fully blended.
  3. Stir in the drained Rotel tomatoes and shredded cheddar cheese.
  4. Add the baking mix and mix until everything is evenly combined. The mixture will be thick.
  5. Roll into 1-inch balls and place on the prepared baking sheet about 1 inch apart.
  6. Bake for 20–25 minutes or until golden brown and cooked through.
  7. Let cool slightly before serving.

 Tips:

  • For extra heat, use hot Rotel or add a pinch of cayenne.
  • These freeze beautifully! Freeze before or after baking.
  • Perfect for parties, game day, or holiday appetizers
