Rotel Cream Cheese Sausage Balls
Ingredients:
- 1 lb hot sausage, uncooked
- 1 (8 oz) package cream cheese, softened
- 1 (10 oz) can Rotel diced tomatoes and green chilies, drained
- 1 ½ cups shredded cheddar cheese
- 2 cups baking mix (like Bisquick)
Instructions:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, combine the uncooked sausage and softened cream cheese. Mix well until fully blended.
- Stir in the drained Rotel tomatoes and shredded cheddar cheese.
- Add the baking mix and mix until everything is evenly combined. The mixture will be thick.
- Roll into 1-inch balls and place on the prepared baking sheet about 1 inch apart.
- Bake for 20–25 minutes or until golden brown and cooked through.
- Let cool slightly before serving.
Tips:
- For extra heat, use hot Rotel or add a pinch of cayenne.
- These freeze beautifully! Freeze before or after baking.
