 Cheesy Beef Stuffed Biscuits

These fluffy, golden biscuits are filled with tender shredded beef and topped with melted cheese — perfect for dinner, parties, or a hearty snack.

 Ingredients

For the Biscuits (or use store-bought biscuit dough):

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup cold milk

For the Filling:

  • 1 lb (450–500g) cooked shredded beef (roast beef or pulled beef)
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • Salt and black pepper to taste
  • 1 teaspoon paprika
  • 1/2 cup beef broth (to keep the meat moist)

Topping:

  • 1 cup shredded mozzarella or cheddar cheese
  • 1 tablespoon melted butter (optional)
  • 1 tablespoon chopped parsley (optional)

 Instructions

 Prepare the Filling

  1. Heat a little oil in a skillet over medium heat.
  2. Sauté the onion and garlic until softened.
  3. Add the shredded beef, salt, pepper, and paprika.
  4. Pour in the beef broth and simmer for a few minutes until the mixture is moist and flavorful.
  5. Remove from heat and let cool slightly.

 Make the Biscuit Dough

  1. In a bowl, whisk together flour, baking powder, and salt.
  2. Cut in the cold butter using your fingers or a pastry cutter until the mixture resembles coarse crumbs.
  3. Add the milk and gently mix just until combined (do not overwork the dough).
  4. Roll out to about 1-inch thickness and cut into rounds or squares.

 Assemble

  1. Place a spoonful of beef filling on one biscuit piece.
  2. Top with another piece of dough and gently press the edges to seal.
  3. Arrange on a greased baking sheet.

 Bake

  1. Brush the tops with melted butter.
  2. Sprinkle generously with shredded cheese.
  3. Bake in a preheated oven at 350°F (180°C) for 18–22 minutes, or until golden brown and the cheese is melted and bubbly.

 Serve Warm

Soft inside, flaky outside, and packed with cheesy beef flavor. Serve with a side salad or dipping sauce if desired.
