 Pineapple Fluff Salad

Ingredients:

  • 1 can (20 oz / about 560g) crushed pineapple (do NOT drain, keep the juice)
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup mini marshmallows
  • 1 cup whipped topping (like Cool Whip) or 1 cup freshly whipped cream
  • ½ cup sour cream or softened cream cheese (optional, for a richer taste)
  • ½ cup chopped pecans or walnuts (optional)
  • ½ cup shredded coconut (optional)

 Instructions:

  1. In a large bowl, combine the crushed pineapple (with its juice) and the dry vanilla pudding mix. Stir well until fully mixed.
  2. Add the mini marshmallows and mix.
  3. Gently fold in the whipped topping until light and fluffy.
  4. If using, mix in the sour cream or cream cheese for extra creaminess.
  5. Stir in nuts and shredded coconut if desired.
  6. Cover and refrigerate for at least 1 hour before serving to allow it to set.

 Tips:

  • It tastes even better after chilling for 2–3 hours.
  • You can garnish with pineapple chunks or maraschino cherries.
  • Perfect for potlucks, holidays, or family gatherings!
