Pineapple Fluff Salad
Ingredients:
- 1 can (20 oz / about 560g) crushed pineapple (do NOT drain, keep the juice)
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 cup mini marshmallows
- 1 cup whipped topping (like Cool Whip) or 1 cup freshly whipped cream
- ½ cup sour cream or softened cream cheese (optional, for a richer taste)
- ½ cup chopped pecans or walnuts (optional)
- ½ cup shredded coconut (optional)
Instructions:
- In a large bowl, combine the crushed pineapple (with its juice) and the dry vanilla pudding mix. Stir well until fully mixed.
- Add the mini marshmallows and mix.
- Gently fold in the whipped topping until light and fluffy.
- If using, mix in the sour cream or cream cheese for extra creaminess.
- Stir in nuts and shredded coconut if desired.
- Cover and refrigerate for at least 1 hour before serving to allow it to set.
Tips:
- It tastes even better after chilling for 2–3 hours.
- You can garnish with pineapple chunks or maraschino cherries.
