Collard Greens and Ham Hocks
Ingredients:
- 2–3 lbs collard greens, washed, stems removed, and chopped
- 1–2 ham hocks (smoked)
- 1 large onion, chopped
- 3 garlic cloves, minced
- 4 cups water or chicken broth
- 1 teaspoon black pepper
- ½ teaspoon red pepper flakes (optional)
- Salt to taste
- 1 tablespoon apple cider vinegar (optional, but recommended)
Instructions:
- In a large pot, add the ham hocks and water (or broth). Bring to a boil, then reduce heat and simmer for about 45 minutes to release the flavor.
- Add the chopped onion and garlic. Cook for 5 minutes.
- Add the collard greens gradually, stirring until they wilt down.
- Season with black pepper and red pepper flakes. Cover the pot.
- Let everything simmer on low heat for 45 minutes to 1 hour, until the greens are tender and flavorful.
- Remove the ham hocks, shred the meat off the bone, and return the meat to the pot.
- Add apple cider vinegar at the end and adjust salt if needed.
Serve With:
- Cornbread
- White rice
- Or enjoy it on its own as a comforting Southern-style dish
