 Collard Greens and Ham Hocks

 Ingredients:

  • 2–3 lbs collard greens, washed, stems removed, and chopped
  • 1–2 ham hocks (smoked)
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 4 cups water or chicken broth
  • 1 teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • Salt to taste
  • 1 tablespoon apple cider vinegar (optional, but recommended)

 Instructions:

  1. In a large pot, add the ham hocks and water (or broth). Bring to a boil, then reduce heat and simmer for about 45 minutes to release the flavor.
  2. Add the chopped onion and garlic. Cook for 5 minutes.
  3. Add the collard greens gradually, stirring until they wilt down.
  4. Season with black pepper and red pepper flakes. Cover the pot.
  5. Let everything simmer on low heat for 45 minutes to 1 hour, until the greens are tender and flavorful.
  6. Remove the ham hocks, shred the meat off the bone, and return the meat to the pot.
  7. Add apple cider vinegar at the end and adjust salt if needed.

Serve With:

  • Cornbread
  • White rice
  • Or enjoy it on its own as a comforting Southern-style dish
