 Classic Cheese Soufflé

Ingredients:

  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 cup whole milk (slightly warm)
  • 4 large eggs (separated)
  • 1 cup grated cheese (Gruyère, Cheddar, or any good melting cheese)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • A pinch of nutmeg (optional)

Instructions:

1. Prepare the Dish

  • Preheat oven to 375°F (190°C).
  • Butter a round glass or ceramic baking dish and lightly dust with flour.

2. Make the Base (Béchamel Sauce)

  • Melt the butter in a saucepan over medium heat.
  • Add the flour and whisk for about 1 minute.
  • Gradually add the milk while whisking to avoid lumps.
  • Cook until the mixture thickens.

3. Add Egg Yolks and Cheese

  • Remove from heat.
  • Quickly whisk in the egg yolks.
  • Stir in the grated cheese, salt, pepper, and nutmeg.

4. Beat the Egg Whites

  • In a clean bowl, beat the egg whites until stiff peaks form.
  • Gently fold the egg whites into the cheese mixture using soft upward motions to keep the air inside.

5. Bake

  • Pour the mixture into the prepared dish.
  • Bake for 25–30 minutes, until puffed and golden brown on top.
  • Do not open the oven while baking.

Serving Tip:

Serve immediately after removing from the oven. Soufflé rises beautifully but will deflate quickly.
