Slow Cooker Hamburger Vegetable Soup

 Ingredients:

  • 1 lb (450g) ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, chopped
  • 2 medium potatoes, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth
  • 1 cup green beans (fresh or frozen)
  • 1 tsp Italian seasoning
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • Optional: 1 cup frozen corn

 Instructions:

  1. In a skillet over medium heat, cook the ground beef until browned.
  2. Add the chopped onion and garlic and cook for 2–3 minutes. Drain excess fat.
  3. Transfer the beef mixture to the slow cooker.
  4. Add carrots, celery, potatoes, green beans, tomatoes, tomato sauce, and beef broth.
  5. Season with Italian seasoning, salt, and pepper.
  6. Stir well to combine.
  7. Cover and cook:
    • On LOW for 6–8 hours
    • Or on HIGH for 3–4 hours
  8. Taste and adjust seasoning before serving.

Serving Tips:

  • Serve hot with crusty bread.
  • You can sprinkle grated Parmesan cheese on top.
  • Perfect for meal prep and freezes very well!
