Savory Breakfast Egg Muffins
Ingredients:
- 6 large eggs
- 1 cup milk
- 1 cup all-purpose flour
- 1 cup shredded cheese (cheddar or mozzarella)
- ½ cup diced cooked ham or turkey
- ¼ cup diced red bell pepper
- 2 tablespoons chopped parsley or green onions
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions:
- Preheat your oven to 350°F (180°C).
- Grease a muffin tin or line it with paper liners.
- In a large bowl, whisk together the eggs and milk until well combined.
- Add the flour, salt, and black pepper. Whisk until smooth.
- Stir in the shredded cheese, diced ham, bell pepper, and parsley.
- Fill each muffin cup about ¾ full with the mixture.
- Bake for 20–25 minutes, or until golden on top and set in the center.
- Let them cool slightly before removing from the pan.
Serve warm. These are perfect for breakfast, brunch, or meal prep — just refrigerate and reheat!
