 Savory Breakfast Egg Muffins

 Ingredients:

  • 6 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 cup shredded cheese (cheddar or mozzarella)
  • ½ cup diced cooked ham or turkey
  • ¼ cup diced red bell pepper
  • 2 tablespoons chopped parsley or green onions
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

 Instructions:

  1. Preheat your oven to 350°F (180°C).
  2. Grease a muffin tin or line it with paper liners.
  3. In a large bowl, whisk together the eggs and milk until well combined.
  4. Add the flour, salt, and black pepper. Whisk until smooth.
  5. Stir in the shredded cheese, diced ham, bell pepper, and parsley.
  6. Fill each muffin cup about ¾ full with the mixture.
  7. Bake for 20–25 minutes, or until golden on top and set in the center.
  8. Let them cool slightly before removing from the pan.

Serve warm. These are perfect for breakfast, brunch, or meal prep — just refrigerate and reheat!
