Ingredients
- 2 pounds red potatoes, cut into bite-size chunks
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 3 tablespoons balsamic vinegar
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme (or Italian seasoning)
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Step 2: Prepare the Potatoes
Wash the red potatoes and cut them into evenly sized chunks. Leave the skin on for extra texture and flavor. Pat them dry with a paper towel.
