 Mini Meatloaf Muffins

 Ingredients

  • 2 lbs (about 900g) ground beef
  • 1 small onion, finely chopped
  • 1/2 green bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/3 cup milk
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce (optional, but adds great flavor)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

 For the Topping (Optional)

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon mustard

 Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a muffin tin or use muffin liners.
  3. In a large bowl, combine the ground beef, onion, bell pepper, garlic, breadcrumbs, eggs, milk, ketchup, Worcestershire sauce, salt, and pepper. Mix until just combined (do not overmix).
  4. Divide the mixture evenly into the muffin tin cups, pressing gently to shape.
  5. If using the topping, mix ketchup, brown sugar, and mustard together and spoon a little over each meatloaf.
  6. Bake for 20–25 minutes, or until the meat is fully cooked and no longer pink inside.
  7. Let them rest for 5 minutes before removing from the pan.

Serve with mashed potatoes or a fresh salad.
