Creamed Chipped Beef (SOS) – A Depression-Era Classic

A simple, budget-friendly comfort food made with just 5 ingredients. Traditionally served over toast.

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup dried beef (chipped beef), chopped
  • ½ teaspoon black pepper

Optional: salt to taste (dried beef is usually salty enough)

 Instructions

  1. In a medium skillet over medium heat, melt the butter.
  2. Stir in the flour and cook for about 1 minute, whisking constantly to form a light roux.
  3. Slowly pour in the milk while whisking to prevent lumps.
  4. Continue cooking and stirring until the sauce thickens and becomes smooth and creamy.
  5. Add the chopped dried beef and black pepper.
  6. Simmer for 3–5 minutes until heated through and well combined.

How to Serve

Serve hot over:

  • Toast (the traditional way)
  • Buttermilk biscuits
  • Mashed potatoes
  • Rice
