Blueberry Cottage Cheese Protein Bake
High-Protein Breakfast – Light, Fluffy & Naturally Sweet
This easy baked breakfast is packed with protein and perfect for meal prep. Soft, creamy, and bursting with blueberries!
Ingredients (Serves 2–3)
- 1 cup cottage cheese (about 220g)
- 2 large eggs
- 2–3 tablespoons honey or sweetener of choice
- 1 teaspoon vanilla extract
- 2 tablespoons oat flour (or blended oats)
- ½ teaspoon baking powder
- Pinch of salt
- ¾ cup fresh or frozen blueberries
- Optional: 1 scoop vanilla protein powder (for extra protein boost)
Instructions
- Preheat the oven to 350°F (175°C).
- Lightly grease small ramekins or one small baking dish.
- In a blender, combine:
- Cottage cheese
- Eggs
- Honey
- Vanilla
Blend until smooth and creamy.
- Add oat flour, baking powder, and salt. Blend briefly to combine.
- Gently fold in half of the blueberries.
- Pour the mixture into your prepared dish(es).
- Top with the remaining blueberries.
- Bake for 20–25 minutes, or until the top is golden and the center is set.
- Let cool slightly before serving.

Tips
- Do not overbake if you want a softer, custard-like texture.
