Pineapple Bake Sweet & Buttery Southern-Style Side Dish

This classic Pineapple Bake is a sweet, buttery casserole that’s perfect for holidays, potlucks, or Sunday dinner. It pairs especially well with baked ham or roasted chicken!

 Ingredients (US Measurements)

  • 1 can (20 oz) crushed pineapple, undrained
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 4 tablespoons (1/4 cup) unsalted butter, melted
  • 3 tablespoons all-purpose flour
  • 1 cup shredded sharp cheddar cheese
  • 1/4 teaspoon salt
  • 1 sleeve (about 1 cup) crushed buttery crackers (like Ritz)
  • 2 tablespoons melted butter (for topping)

 Instructions

  1. Preheat oven to 350°F (175°C).
    Grease an 8×8-inch baking dish.
  2. Mix the filling:
    In a large bowl, whisk together sugar, eggs, flour, melted butter, and salt.
  3. Add pineapple & cheese:
    Stir in the crushed pineapple (with juice) and shredded cheddar cheese. Mix well.
  4. Pour into dish:
    Spread mixture evenly in the prepared baking dish.
  5. Prepare topping:
    In a small bowl, mix crushed crackers with 2 tablespoons melted butter.
    Sprinkle evenly over the top.
  6. Bake:
    Bake for 35–40 minutes, or until golden brown and set in the center.
  7. Cool slightly before serving (about 10 minutes).

 Tips

  • For extra crunch, add 1/4 cup chopped pecans to the topping.
  • Best served warm.
  • Pairs perfectly with glazed ham for Easter or Christmas dinner.
  • Store leftovers in the refrigerator up to 3 days.
