Creamed Chipped Beef on Toast

Ingredients

  • 8 slices white sandwich bread, toasted
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 3 cups whole milk (warm)
  • 1 jar (2.5 oz) dried beef, chopped
  • 1/2 teaspoon black pepper
  • Salt to taste (optional – dried beef is salty)

Instructions

  1. Prepare the beef
    If the dried beef is very salty, rinse it quickly under cold water and pat dry. Chop into small pieces.
  2. Make the roux
    In a large skillet, melt butter over medium heat.
    Add flour and whisk continuously for 1–2 minutes until smooth (do not brown).
  3. Add milk
    Slowly pour in warm milk while whisking to avoid lumps.
    Cook until the sauce thickens (about 3–5 minutes).
  4. Add beef & seasoning
    Stir in chopped dried beef and black pepper.
    Simmer for 2–3 minutes until creamy and heated through.
  5. Serve
    Spoon generously over toasted bread slices. Serve hot.

Tips

  • For extra richness, add a splash of heavy cream.
  • Some people add a pinch of garlic powder.
  • Traditionally served for breakfast.
