Pecan Pie Muffins
Mini muffins with the gooey, sweet flavor of classic pecan pie — perfect for dessert or coffee time.
Ingredients
- 1 cup chopped pecans
- ¾ cup brown sugar
- ¼ cup melted butter
- 2 eggs
- 1 tsp vanilla extract
- ½ cup all-purpose flour
- ¼ tsp salt
- Optional: extra pecans for topping
Instructions
- Preheat oven to 175°C (350°F). Grease or line a muffin tin.
- In a bowl, whisk eggs, brown sugar, melted butter, and vanilla.
- Add flour and salt, mix until just combined.
- Fold in chopped pecans.
- Spoon batter into muffin cups (about ¾ full).
- Optional: add extra pecans on top.
- Bake for 18–22 minutes, until golden and set in the center.
- Cool slightly before serving.
Tips
- For extra gooey muffins, slightly reduce flour (by 1 tbsp).
- Serve warm with whipped cream or vanilla ice cream
- You can add a pinch of cinnamon for more flavor.
