These Brownie Mix Cookies are rich, fudgy, chewy, and incredibly easy to make. They have the deep chocolate flavor of brownies with the soft, crackly texture of cookies. Perfect for dessert, parties, or a quick sweet treat!
Ingredients:
- 1 box (18 oz) brownie mix
- 1/4 cup all-purpose flour
- 2 large eggs, room temperature
- 1/4 cup vegetable oil (or melted unsalted butter)
- 1/2 cup semi-sweet chocolate chips (optional, but recommended)
- 1/4 cup chopped walnuts or pecans (optional)
- 1 teaspoon vanilla extract (optional, for extra flavor)
- A pinch of salt (optional, enhances chocolate flavor)

Instructions:
1. Preheat the Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
2. Mix the Dough
In a large mixing bowl, combine:
- Brownie mix
- Flour
- Eggs
- Oil (or melted butter)
- Vanilla extract (if using)
Stir until a thick, sticky cookie dough forms. The dough should be thicker than brownie batter.
3. Add Mix-Ins

4. Scoop the Cookies
Use a spoon or cookie scoop to drop rounded tablespoons of dough onto the baking sheet.
